What happens to a meticulous planner when their plan falls through...??
As you may know; the purpose of this blog is to share ways that Josh and I make meals that fit my "diet" restrictions while still meeting his high (cal/carb) dietary needs.
Let me begin with a little bit about me... Amanda.
...I am currently participating in Beach Body's 21 Day Fix (awesome program- I've seen great results thusfar!) with this program you have to be strategic about what/when you eat
...I am a full time teacher (meaning I am broke and have next to no time)
...I also HATE doing dishes every day
What do all of these things equate to, you might ask... I have become a meticulous planner when it comes to my food.

Like Abe Lincoln I would much rather work smarter not harder... so I do A LOT of food prep to save me time on my meals (but that's a post for another time).
For those who know me... when things don't go according to plan I get rather frazzled.

The world might come to an end...
It's been a week already- and it's only Tuesday. It's my track out week so it's already hectic trying to get everything done before my students track out... add to that I had meetings right after school- keeping me later than expected. Boyfriend is coming over to watch a movie.... AND I forgot to take meat out of the freezer to defrost this morning. Unfortunately, my budget doesn't allow for me to just stop at the store and pick up fresh meat on a whim...
and the worst part.... I'm ALREADY HUNGRY!
What ever shall I do?!?
Enter my saving grace----- LEFTOVERS.
I know what you're thinking... Boring! Gross! Cold! #Leftovers... bleh...
But I love making those meals that empty the fridge. And one of the best, inexpensive options for that:
Fried Rice, or any kind of stir fry really. They are very versatile- I don't think I've ever made the same fried rice twice. (Hehe that rhymes)
In fact... I did in fact make this fried rice two different ways.
For Him: Pork Fried Rice For Her: Pork Fried (Cauliflower) Rice
How did we do it?
2 Tbs. vegetable oil
1 cup cooked rice
1 cup riced cauliflower (I use this ALL the time so I buy a huge bag from Costco)
Chopped Veggies (carrots, onions, celery, peas, corn- really anything you have in the fridge)
2 Tbs. Soy Sauce (For Him)
2 Tbs. Liquid Aminos (For Her)
Meat (optional but again whatever you have; chicken, pork, ham, shrimp, steak... in this case I had some leftover Pork Tenderloin from Monday night- Harris Teeter has an amazing pork loin in the Deli on sale on Monday nights-- so I was ecstatic to find another use for the meat I had left.)
Cook your rice according to package directions- unless you have leftover rice which is perfect for this. If cooking fresh rice, once it's finished put the pot into an ice bath.
Also, if needed defrost cauliflower rice. Mine comes frozen so I put 1 cup of the cauliflower into a bowl and cook for 2 minutes in the microwave.
While rice cooks; on a medium-high stove top heat oil in a wok, or skillet cook vegetables in oil until they are slightly tender- about 5 minutes. Thicker vegetables such as carrots will take a little bit longer.
Remove half of the vegetables to a separate bowl.
In the wok, you should still have half of your vegetables, add the cauliflower rice and liquid aminos. Constantly move the fried "rice" around the pan until it is well blended and golden brown this should only take a few minutes- I like mine with a little crisp on it so I like to turn the heat up to high and cook a little longer. Remove from pan.
Add the remaining vegetables, "real" rice" and soy sauce. Repeat the mixing process for this rice- until browned and heated through. Remove from the pan.
Enjoy!
Again this is a very versatile recipe... other ways you can change it:
Before cooking the vegetables cook an egg (scrambled or fried) to add into the rice mixture.
This adds extra protein and flavor!
Top with green onions

Susan Long: I use Liquid Aminos because it's better for you than regular soy sauce. It has amino acids in it that help with digestion, a lot less sodium, less preservatives, etc. Now, it does have a distinct taste- but in many dishes I prefer the taste of the Liquid Aminos to soy sauce.
You can find it at any grocery store- sometimes it's with the health foods, sometimes it's with soy sauces, it depends on the store you're in.
