Bagel Bombs

Early mornings are a part of life that can make or break your entire day (at least that's how I feel). When I wake up late or miss any chunk of my morning routine it seems to throw the rest of the day off. Regardless, I like to make sure I have a few key tools on hand to keep my early mornings running smoothly- whether it's in routine or a little bit out (come on, those days are inevitable).



These bagel bombs were an adaptation of the 2 ingredient bagel craze. I absolutely loved the bagels and I saw a video posted by one of my favorite bloggers (SkinnyTaste) in which she made a bagel bite with a cube of cream cheese in the middle. I took this idea and ran with it... and the results were delicious! These bagel bombs are versatile- I've made them with several different fillings and toppings. They freeze amazingly well and when reheated they taste like they're fresh out of the oven.


I do provide two options for cooking- I prefer them in the air fryer but when making larger batches it's easier to bake them in the oven.


Bagel Bombs

Weight Watchers Points: 2 per bagel bomb

Servings: 16 bagel boms


Ingredients:

Bagels

2 cups self-rising flour

2 cups non-fat plain greek yogurt

Filling:

10 eggs

1/2 cup water

8 slices of turkey bacon, cooked and chopped

1 1/2 cups fat free mozzarella


Topping:

1 egg white for wash

Everything Seasoning


Scramble eggs with water, and your preferred fillings. Let it cool completely.


Mix flour and greek yogurt in a bowl. Once the dough gets hard to mix, pour out over a flour surface. Knead the dough until it is not too sticky to the touch. Separate into 16 even pieces. Flatten a piece of the dough in your hand and place 1-2 tablespoons of the egg filling into the dough and press the edges together. Form the dough into a ball and roll in your hands until evenly covered- make sure no egg mixture is exposed (otherwise the cheese will end up all over your oven instead of in your tummy).

Place the bagel bombs on a sheet pan or in your air fryer basket, brush the tops of the bagel bombs with egg wash and sprinkle with topping.

Air fryer: 320 for 11-12 minutes

Oven: 375 for 25 minutes- then broil for 2 minutes to brown the tops

Cool on a rack. If freezing flash freeze in the freezer- in a single layer before placing in a container/bag.
