An Introduction is in Order



Meet Amanda!

I am a Kindergarten teacher by day, Zumba instructor on the weekends, small group leader on Wednesdays, therapy dog volunteer sometimes... and full time foodie!



I have been in love with food since I was very young- pretending to have my own cooking show while cooking scrambled eggs was a favored past-time.

I was also very active as a child- being involved in dance, playing basketball, playing outside all the time!








Leaving my teen years (and a pretty good metabolism) behind... I learned an important lesson in my early 20's. Based on my family history and my unfortunate treatment of my body during college years (one too many beers I presume :P) I would have to really buckle down, make some sacrifices and make eating healthy a priority if I wanted to stay in shape.

Thankfully this was right around the time that I found a life saver in Zumba! In high school I discovered I have exercise induced asthma... which makes exercising one of my least favorite activities.


However, with Zumba I found that the intraval training methods were PERFECT and didn't leave me (too) winded at first. It allowed me to gain some stamina in the cardio department which then pushed me into a more well-rounded exercise regime. I can't say that I'm perfect but I'm a constant work in progress!


Not so unlike other folks- I have to make very conscious decisions about what I eat- but I hate to sacrifice good flavor for "Skinny" food. And that can get difficult, especially when you're cooking for other people that don't have the same dietary restrictions.

I've been adjusting my meal plans for some time... now it's time to share it with the world!



Meet Josh

I'm a (temporarily) out of work front-end developer. I enjoy everything from fishing to cooking to concerts to movie marathons on the couch. I learned long ago that there are only 3 things that Amanda needs: Food, Water, Compliments. I could do the compliments and water is free.




That's when I realized it was time to kick up the food. The problem? I have a genetic disease called cystic fibrosis (thats my cough you'll hear in all our videos!). Besides primarily being a lung disease, CF also affects the ability to properly digest food. I have to supplement this with a super high calorie and high protein diet. Add in my ever health-conscious girlfriend and that got tricky QUICK. Hence, Skinny and Spice was born. So grab a beer, strap in and follow along as we take you on a crazy journey in cooking two very different yet near identical meals. Our friends all enjoy laughing at us so you might as well, too!


Long Story short- we love to eat... but we need different things in our diets. So when we have date night or just hang out and realize it's been 2 hours since we last ate.... this is our journey of finding a happy and healthy balance in our dietary lives together :)

I know... I know... so romantic ;)
