Bang Bang Shrimp- Three Ways!

Now the recipe for today actually started a few months ago- while visiting with my parents a few months ago my Mom was determined to make a copycat Bang Bang Shrimp recipe from Bone Fish Grill. I had never actually had it before but I went along with it... we ended up making THREE POUNDS of Bang Bang shrimp... it was incredibly delicious but man did it take forever to fry all that shrimp!

A couple weeks ago a recipe popped up on my Pinterest for "Skinny Bang Bang Shrimp" and you can imagine how intrigued I was. So obviously we had to try this out as a vlog recipe :P



Amanda here! Wow! It feels like forever since I last got to type up a blog post for you lovely people! Let me quickly catch you up to speed:

Let me just tell you... it has been a crazy couple of months. As a year round teacher we have to "clopen" every July... this means we close one year and open the next simultaneously. We celebrate the end of one school year and then have a couple of days to turn around- have a lot of trainings and new material thrown at us... and then the next week start all over with a new class and a new school year!

It's probably the most hectic time of the year for me... but I still wouldn't trade my track outs for ANYTHING!

That being said... I have spent more hours at school- early mornings, late nights, even weekends. And Josh has been so incredibly supportive... bringing me food, cooking me dinners, surprising me with packed lunches.... but most importantly forcing me to take some "me time" to stop and breathe every now and then.


Where has Josh been???


Josh started a new job at the beginning of the month! And with adjusting to a new work and sleep schedule (early mornings, woohoo!), longer commutes to work- and a pretty non existent girlfriend...I'm not sure how he found time this month to be the wonderful man that he is! On top of that he's been getting his side business RDU Prep started up. I really don't know what I would've done without him this month.


However! We've got some great volgs and recipes to share with you coming up in this next month! So stay tuned.



This was Josh's first time making the fried Bang Bang shrimp and my first time making the "Skinny" version.


Bang Bang Shrimp:




Ingredients you'll need.












To get started; peel 1 lb. shrimp and cover with Buttermilk (about 1/2 c.) Let soak for 30+ minutes.










Next, mix 1/2 cup mayo, 1/4 cup sweet thai chili sauce, 1/4 tsp. sriracha (or if you follow Josh's measurements... a few heavy squirts of sriracha) in a large bowl.


Heat a couple inches of oil in a pan to 375 degrees. If you don't have a thermometer to test the temperature- stick a wooden spoon in the oil and if bubbles form around the wood then it's ready for frying.

Drain the buttermilk off of your shrimp and place in a plastic bag with 3/4 cup of corn starch. Close the bag and shake well to coat the shrimp.

Place a few shrimp in the oil at a time (don't over crowd your pan). Fry for 1-2 minutes on each side or until golden brown.

Remove from oil and place on a paper towel to absorb some of the oil.

Toss in the sauce that you made earlier. Serve over rice or noodles.



Skinny Bang Bang Shrimp


Again, you're going to start by peeling 1lb. of shrimp.



Next, put the shrimp on skewers (make sure the skewers were soaked in water first to prevent burning)


Grill your shrimp for 5-6 minutes per side- or until nice and pink.

-OR-

Put on a baking sheet and bake at 350 for 8-10 minutes.


Next, mix your sauce together:

3 Tbs. plain greek yogurt

1 1/2 Tbs. Sweet Thai Chili Sauce

1/4 tsp. sriracha

(turns out mine was very spicy- so I would recommend adding a dab of sriracha and tasting along the way so that it's not too spicy- you can always add more later but you can't take it away!


Remove shrimp from grill and brush the sauce on the shrimp. Or in my case... toss the shrimp in the sauce.

Serve over pasta, brown rice or salad!


This was a Weight Watchers recipe too! And it was delicious!
