Get up early, be healthy, walk the dogs, work out, go to work, after school activities, socialize, eat 3 meals a day... or 6 or 7... don't forget to drink plenty of water, caffeinate... go to sleep. REPEAT!
Anyone else's day look like this?? And I don't even have children! I can't imagine how you working Mom's and Dad's handle it all!
In order to keep up with my busy every day schedule and maintain a healthy diet... I have to plan, a LOT. And honestly, I do as much meal prep as I can to make it quick and easy when time really matters.
Prime example: I LOVE breakfast... I mean people say "breakfast is the most important meal of the day" but seriously, I must have a good breakfast in the morning.
And when I say "good breakfast" I mean eggs, bacon, oatmeal, toast- something cooked. Nothing coming out of a box.
Problem is:
I am a Kindergarten teacher and my school starts early... 7:10. Meaning I am leaving my house by 6:30am... and with walking/caring for 2 dogs and a cat, having some quiet time reading my Bible, PLUS getting myself ready, I have to be very time conscious.
Solution is:
Make ahead breakfast, that go in the fridge or freezer and just have to be popped in the microwave or oven and they're ready to eat.
No dishes, no cooking time, but still a delicious breakfast!
I've tried a ton of different options too;
Pancakes, french toast, overnight oats, egg cups, burritos, crunch wraps... all delish.
Today I'm going to be sharing my Breakfast Sandwiches- these can be frozen for up to a month.
Best part... they're healthy!
**This is great for parents who want to give their kids multiple options for breakfast... stock the freezer with different breakfast items and the kids just have to pop it in the microwave and throw their paper plate away!**
To make 6 breakfast sandwiches:
Mix together 10 eggs and 1/4 cup of water (or milk).
Add your "mixins". I added 3/4 cup broccoli, 3/4 orange pepper, 1/2 cup red onion.
Once you have blended well. Pour into a 9x13 inch pan that has been sprayed with non-stick cooking spray. (I forgot previously, and added 2 Tbsp. of salsa and mixed it around at this point.)
Bake at 375 for 25 minutes.
Add 2 cups of cheddar cheese- bake for 5 more minutes.
While you're eggs are baking- you can also throw your meat in the oven. I made some turkey bacon and heated some low sodium ham slices as well.
Last: Toast your bread. I used Arnold's Sandwich Thins. Broil for 2 minutes on each side or until desired "toastiness"
Assembly:
Slice your eggs into 6 equal pieces, top with meat, scoop out with a spatula and slide onto your toast. **Seriously the fastest assembly, I love it!**
Next, wrap in a slightly moist paper towel, then wrap tightly in cling wrap or wax paper.
Last but not least: you'll want to "flash freeze" your sandwiches. This means place them in the freezer in a single layer for about 30 minutes. This helps them keep their shape when you stack them in the freezer.
**Tip time**- I use magazine organizers to save room in the freezer for this process.
And there ya have it! I used a few pans- in order to make 18 sandwiches at once.
So let's look at the time saving aspect:
Making one sandwich each day
10-15 minutes to cook + 5 minutes for dishes = 20 minutes per day
20 minutes x 18 days =
360 total minutes
Making the sandwiches ahead took:
20 min. prep time + 35 min. cook time + 10 min. cool time + 15 min. assembly + 5 min wash dishes =
85 minutes
That's a total savings of over 4.5 hours in the morning over a month!
That's 15 extra minutes per day- that you now get to hit snooze for!
